In 1994 Jean-Paul Signoret, a French pastry chef originally from Provence started Pastry Provençal with his dedicated partner Teresa Woodland, servicing local businesses with delicious French pastry. It was at the Byron Bay Blues Festival in1996 that we were asked to make some pies.
The pies became so popular that we decided to give them all our attention and streamline our operation to only pie making. That marked the beginning of ‘Byron Gourmet Pies’. Jean-Paul's passion since early age for pastry, cooking and travelling set the foundation for the creation of some of the most exciting ,original and exotic gourmet flavours.
14 years later after much hard work and innovation, with the help of our 2 sons Nat & Jordie, our daughter Sylvie and some tremendous staff, we now enjoy the reputation of being one of the finest gourmet pie-makers in the country.
